Development and Nutritional Evolution of Adaptogen-Fortified “Sago” Based Functional Snack

Abstract

The global food industry is progressively transitioning toward modern food systems that emphasize health promotion and disease prevention through functional foods and nutraceuticals. Nutraceuticals are food products that provide medical or health benefits beyond basic nutrition, thereby bridging the gap between food and medicine. In this context, the present study explores the development of a value-added functional snack, Power Poppers, by fortifying a traditional sago-based snack with nutritionally rich and medicinally significant ingredients such as chia seeds, Moringa (Moringa oleif-era), and Ashwagandha (Withania somnifera). Sago, although widely consumed for its energy value, is characterized by a high glycemic index and relatively low micronutrient content. The incorporation of these bioactive ingredients aims to improve the nutritional density, antioxidant capacity, and functional properties of the snack while enhancing its health benefits. Chia seeds contribute dietary fiber, omega-3 fatty acids, and protein; Moringa is a potent source of antioxidants, vitamins, and minerals; while Ashwagandha acts as an adaptogen, supporting stress management and overall wellness. Simulated experimental results indicate that fortification with 5% Moringa significantly enhances the antioxidant potential of the product, as evidenced by a marked increase in free radical scavenging activity measured using the DPPH assay, without adversely affecting sensory attributes such as taste, texture, and overall acceptability. Additionally, the formulation demonstrates an improved glycaemic response and nutrient profile, making it suitable for health-conscious consumers. This study provides a scientific framework for transforming traditional snacks into functional nutraceutical products and offers practical guidelines for the commercialization of adaptogen-infused foods, aligning with current consumer demand for convenient, health-enhancing dietary options.
